The latest Hello Fresh had some great twists on summer favorites, with steak, burgers, and a big salad.  Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries and choose alternate meals (at least for the Classic box). There’s also a vegetarian box available. This is a solid meal subscription box with easy and accessible recipes.  Take $40 off your first box with coupon code 7UT7K8.

Hello Fresh recently redesigned their menu cards, and the instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated.

Bloody Mary Chicken with Pancetta, Pickled Red Onion & Tomato-Horseradish Vinaigrette hello freshBloody Mary Chicken with Pancetta, Pickled Red Onion & Tomato-Horseradish Vinaigrette – Level 1, 40 minutesBloody Mary Chicken with Pancetta, Pickled Red Onion & Tomato-Horseradish Vinaigrette

For all the ingredients it contained, this went together very easily.  The pancetta crisped nicely, and the spicy “bloody Mary” sauce was a nice accompaniment to the chicken, although I thought the chicken and sauce would have made a better hot sandwich than it did a salad.  The tube of tomato paste is huge and can go in your fridge for use in many future recipes.

Lebanese Beef Skewers with Herby Quinoa Tabbouleh ingredientsLebanese Beef Skewers with Herby Quinoa Tabbouleh – Level 1, 40 minutes

Lebanese Beef Skewers with Herby Quinoa TabboulehThe cayenne packed a bit more punch than expected, so we lost a little of the flavor of the skewers in the heat.  The tabbouleh was very nicely balanced and had great, classic flavors, and the quinoa was pleasantly tender (which I preferred to the “crispy” quinoa I’ve had before).  The meal came with larger portions of spices than were required by the recipe, so some measuring was required to avoid overdosing, but we had the bonus of some leftover to add to our spice rack.

Tempura Fish Tacos with Avocado Crema & Cabbage-Radish Slaw ingredientsTempura Fish Tacos with Avocado Crema & Cabbage-Radish Slaw – Level 3, 35 minutes

Tempura Fish Tacos with Avocado Crema & Cabbage-Radish SlawI thought the avocado dressing was absolutely brilliant.  The peppery cabbage, bitter radish, sour cream and sweet avocado made a complex, crunchy, and and utterly delicious side and topping.  The fish was tender and tasty, but the batter was slightly too thin prepared as directed, making the coating very thin.  I think this was a level three just because of the battering involved — it was still fairly straightforward and worth the effort.

Hello Fresh always has fresh produce, high-quality meats, and name-brand condiments/ingredients, so even the occasional dish that doesn’t sing to you will still make for a decent meal.  One of the great things about Hello Fresh is the ease of preparati0n.  The knife work is simple, and I’m always amazed at the great flavors I can get using just a few key herbs and seasonings. Take $40 off your first box with coupon code 7UT7K8.

Here are the selections for next week! Meal choices end Wednesdays at midnight.

You can click on each dish and get the recipe information, including calories, ingredients, and difficulty levels. Brandy isn’t a big seafood eater but the cornbread pie sounds pretty great, and I’m happy to see the return of those collards.
