This batch of recipes contained some exciting combinations, from a new spin on salmon, to an easy version of an Italian classic, to an all-too-easy Caribbean pleaser.

There’s also a vegetarian box available. This is a solid meal subscription box with easy and accessible recipes.

Hello Fresh recently redesigned their menu cards, and the instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated.

They’re also working on their packaging.  Each recipe now comes in its own sealed box — this should limit crush damage and freezer-burn to the more delicate veggies and fruits.  Meat is still tucked in a separate section of the crate with the ice packs to ensure colder temps.

Pan-Seared Salmon with Honeydew-Cucumber Salsa & Watercress Salad:  All the items in this dish were tasty and delightful, though the salsa didn’t quite bring the dish together in the manner intended.  As I remarked in another Hello Fresh post, salmon and sweet potato go great together, but some preparations serve the ingredients better than others.  The watercress salad was plentiful and a nice accompaniment, but the sweetness of the melon was too diluted by the cucumber to serve as a sweet counterpoint, and the mint felt a bit out of place.  Still an enjoyable dish, and very colorful and pretty on the plate.Pan-Seared Salmon with Honeydew-Cucumber Salsa & Watercress Salad

Prosciutto-Wrapped Chicken Saltimbocca with Garlic-Sage Spinach & Burst Tomatoes:  The prosciutto crisped up nicely and created a steaming pouch in which the chicken tenderized without drying out.  The spinach wilts down to a side-sized serving that packs a delicious dose of garlic.  The shallot lemon-butter is the perfect topping for this eat-every-last-bit dish.  This dish has a very fancy look it, but it is incredibly simple to make — keeping the prosciutto in place when slicing the finished dish is the only difficult part!

Curried Jamaican Beef & Collard Greens with Spicy Red Chili & Creamy Polenta:  I used the entire chili, expecting a fiery dish, but removal of the seed neutered its punch.  The creamy polenta was a great counterpoint to the multi-faceted, savory beef.  The addition of collards was a nice touch, adding some depth of flavor and some veg content to the dish.  Packed with flavor, this recipe was exceedingly simple to prepare and is a recipe I am certainly stealing for future use.
