The theme this month:
Rice is Japan’s most important crop and has been cultivated across the country for over 2000 years. It is the primary staple food of the Japanese diet and of such fundamental importance to the Japanese culture that it was once used as currency. The word for cooked rice (gohan) has even become synonymous with the general meaning of “meal”.
Senbei (せんべい) are baked or fried rice crackers made with dough from crushed non-sticky rice. The first recorded instance of the word ‘senbei’ was dated to around the year 737. The crispy rice crackers made with rice that are so familiar nowadays are believed to have originated in what is now called Sōka city in Saitama prefecture.
