Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries whenever you’d like. They offer both vegetarian and regular (omnivore) boxes – this is the vegetarian box!

Hello Fresh instructions have very nice illustrations, are clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first. Even a novice cook can follow them. Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated. I like that the outer packaging of the box is recyclable.

Hello Fresh is having a Throwback Week. featuring previously featured recipes that their clients loved.  What a great idea!  I must not have been a member when this recipe came out because I’ve never had it before and am so glad that they brought it back, it’s a 10+ on our food scale.  Delicious!!!Tortellini Gratin with Kale and Parmesan Breadcrumbs served

Easy, easy, easy and soooooo good to the taste buds. Perfect proportions and there was some left over pesto which we put a small dollop onto the gratin in the bowls. This was a very nice blend of flavors and textures.  We loved the crispy topping made from the panko, Parmesan and olive oil.  Tortellini Gratin with Kale and Parmesan Breadcrumbs

Our compliments to the chef.

Spiced Moroccan Lentil and Chickpea Soup with Sour Cream and Toasted Pita hello fresh

Spiced Moroccan Lentil and Chickpea Soup with Sour Cream and Toasted Pita. 30 min, level 1, 896 cal.

A wonderful hot bowl of soup is perfect for cold weather.  Too bad in northwest Florida it wasn’t cold. LOL!  Don’t be haters you northern people.  It was about 68 degrees when eating this soup but it was a great bowl of soup.

Spiced Moroccan Lentil and Chickpea Soup with Sour Cream and Toasted PitaIt’s labeled a level 1 on the scale of for preparation and that was correct and so was the amount of time it would take to make the soup and toast the pitas.

Another great Throwback Week recipe, we rated it a 10.

My husband and I love stir fries and this one was delicious.  You could easily fry these ingredients in a wok.  That might be an idea for Hello Fresh, note variations on the recipe card.
