Hello Fresh is a meal kit subscription box with complete recipes and ingredients to make 3 meals every week, with each meal feeding either two or four people, depending on the plan you choose.

Though it is a subscription, you can pause your deliveries when needed — whether you are out of town, have other dinner plans, or just aren’t in love with that week’s selections.  The standard subscription provides high-quality meats (free-range chicken, anti-biotic meats, etc.) to use in the recipes.  Though we do eat meat, we cook vegetarian three times a week.  Thankfully, Hello Fresh has a vegetarian subscription for both casual and dedicated vegetarians.  This review covers the vegetarian box, which featured a recipe by Jamie Oliver!

The boxes used by Hello Fresh keep all the ingredients for the recipes in order, and they stack nicely in the fridge.   Within each box, everything but the largest vegetables is separately packaged.  Condiments and canned goods are provided in high-end, commercial packaging.  Hello Fresh usually provides spices in their own, pre-measured branded packaging.

Hello Fresh has great instructions, and they are easy to follow even if you are an inexperienced cook.

Jamie’s Basil Pesto With Tomatoes, Beans, and Greens. 30 minutes, level 2, 731 calories per serving.
Pesto!  Love that stuff…on anything!  I was looking forward to this meal as I saw  pesto in the title and that’s all it took but when I looked at the ingredients all I could think of was what the heck.  I would never have put cannellini beans with green beans and spinach.  With tomatoes yes, the others, nope.  This was almost like having a pasta dish with a side, the cannellini beans and tomatoes.  That was a very pleasant surprise of taste with all the fresh rosemary.

I’ve always made my pesto with pine nuts so it was a wonderful twist to use ground up almonds. Jamie suggested using  a pestle and mortar to grind up the pesto.  I don’t have those so I used a bullet, worked very well.  I did have to add some of the pasta water and it was just perfect.

I wasn’t raised in the south but I have lived here all my adult life and I do like my beans a little bit softer, the way the southerners cook theirs, all day so the beans are a bit mushy.  The next time I make this recipe, I think I’ll either try cooking the beans with some of the pasta water or mush a few, to get the softness I like but that’s a personal preference.

Portobello Burgers With Avocado, Caramelized Onions, and Spicy Mayo. 25 minutes, level 1, 542 calories per serving.
How many out there would understand the term, “Dagwood sandwich?”  If you don’t know what I mean, Google it.  This burger is totally a Dagwood sandwich, piled high with tasty, scrumptious, good looking food, so big that you can’t fit it in your mouth.  Yup, that describes this burger.  It’s our new favorite burger and the best part is I had my husband cook it for me while I supervised.

Absolutely loved the hot sauce mayo, the mushroom was perfectly seasoned and cooked, nice touch of sweetness with the tomatoes, superbly caramelized onions, and topped of with mashed avocado.  It just can’t get any better than this.  We had to cut it up just to eat it!

Skillet Chilaquiles With Adobo Black Beans, Pickled Radish, and Sour Cream. 25 minutes, level 1, 636 calories per seving.

This certainly looks like an appetizer to me!  Yup, chips, beans, cheese, that just reeks of appetizer but then they had the audacity to suggest frying eggs to go with it and it really did become a wonderful meal.

I have to admit I was disappointed when I laid out the ingredients to take my pictures, it just didn’t look like enough food for a dinner.  This was a great surprising meal, there was plenty and we were very satisfied.  So if you make this for a meal follow the suggestion about frying an egg to go with it.

We were also astonished with the radishes.  Just 1/2 a juice of lime and they were wonderful.

We’ve never been radish fans but tonight I couldn’t get enough, I even swiped some of my husbands but since I let him eat more than 1/2 of the chilaquiles he wasn’t too bothered.

This was a 10, can’t make one complaint!  Happy eating.
