When it comes to such elite entities, we’re not referencing the influx of entertainment icons who’ve flocked to the agave fields to help develop, taste test, and finance their own wares. But, it’s those final products themselves and so many other well-known gems like them—timed perfectly to meet the already-forming, cocktail-driven craze—that led to this current moment of tequila spreading its very adaptable and awards-worthy essence of agave to all corners of the world.
This, of course, doesn’t happen overnight. And it’s to the credit of the growers, harvesters, and distillers on the ground—after centuries of legwork and standing on the shoulders of deep, longstanding Mexican tradition all the way back to pulque-making in the Mesoamerican period—that tequila has become a household name. And while familiarity has only increased, its same peppery kick and lightness that can leap from the margarita to so much more has largely remained the same.

A long and arduous battle royale shows no sign of slowing down and—off the top ropes—it’s Sam Jimenez in acrobatic fashion with this sprightly ode to a legendary luchador of lucha libre (professional wrestling, Mexican-style). His Rayo de Jalisco delivers a real mask-off moment for the dependable tequila soda, revealing its inner capacity to complement all sorts of botanical complexities: the bold boom of GuS’s blackberry soda and our super lemon-lime juice in one corner and the fearless finesse of jasmine-oolong syrup and lime-coriander bitters in another. And the crowd goes wild as yet another tequila cocktail champion is crowned!
Sam is a 28-year veteran of the food and beverage industry, a crafter of cocktails, an agave spirits educator, and a connoisseur of Mexico’s agave-based spirits. He currently represents small-batch craft distilleries that are working to keep Mexico’s unique liquid culture alive. Caer is the general manager for DrinkWell in Austin, TX, and the co-creator of Daijoubu Pop Up: Super Asian Cocktails, a traveling cocktail experience that pushes culinary boundaries in cocktails by incorporating surprising, unusual, and authentic Asian flavors while creating a space for Asian people in front of and behind the bar. She was also a top-4 finalist (!!!) for US Bartender of the Year at the 2023 Tales of the Cocktail Foundation’s Spirited Awards and has been a veteran S&S alum with many great cocktails to her credit, including all the drinks of the dazzling Daijoubu 2 Box, the recent hit Gingerbread Lift, and the fall favorite Wagtails sing.
It’s the kitchen that never disappoints, the one you could’ve only experienced by Baking with Grandma. Amor y Amargo vet Lindsay Matteson would like to channel the essence of granny’s magic oven—and sweets so memorable that they tend to stick in our heads for all of time—with this tequila old fashioned, which compensates for its lack of age in base spirit with the sentimental scents and flavors of warm spices, cherry bitters, and a shaving of dark chocolate on top. A thrilling throwback ensues—enough to want to kick back in onesie pajamas—but, this time, with the cuddle of a great cocktail!
Lindsay is a bartender and bar manager who has played a role at such notable bars as the Flatiron Lounge, Pouring Ribbons, canon, and Amor y Amargo, where she served as the head bartender. Most recently she was the bar manager at Barnacle, an Italian aperitivo bar, and the classic oyster joint the Walrus and the Carpenter in Seattle, WA. Today, she consults on bars and teaches internationally on the overlap of hospitality and mindfulness for the bartender. She also paints cocktails and has a book of her art available on Etsy.
