Hello Fresh is a meal kit subscription box with complete recipes and ingredients to make 3 meals every week, with each meal feeding either two or four people, depending on the plan you choose.

Though it is a subscription, you can pause your deliveries when needed – whether you are out of town, have other dinner plans, or just aren’t in love with that week’s selections. The standard subscription provides high-quality meats (free-range chicken, antibiotic meats, etc.) to use in the recipes.

This review covers the Vegetarian box! Though we do eat meat, we cook vegetarian three times a week. Thankfully, Hello Fresh has a vegetarian subscription for both casual and dedicated vegetarians.

Sometimes things happen with the delivery of your box. In my case this month the box came with a very dented corner but it was of no concern. Hello Fresh is very good about packing your food with a great layer of insulation. I’ve never had any issues with the packaging. As a matter of fact, on several occasions, we’ve used the insulation (after removing the outer plastic cover) for mulching or as a liner for our plant pots before filling with dirt.

When you receive a box from Hello Fresh, they almost always place the recipe cards on top along with other “goodies.” In this week’s box, there was a leaflet “Fresh Life.” I love the leaflets, they are normally packed with food information and ideas.

This week’s was no exception. There was also a green envelope with coupons for friends. Sometimes there’s candy samples, I especially love those!

Hello Fresh has great instructions, and they are easy to follow even if you are an inexperienced cook. Each recipe includes several pictures so you maintain a sense of how the dish should look as you go along.

There are even some kitchen tips included in the information card.

Harissa Sweet Potato Pita Pockets with Cucumber Dill Salad – 30 minutes, Level 1, 800 calories per serving

The pita pockets are a favorite in this house even with our finicky 17-year-old granddaughter. There’s more than enough of the filling, sweet potatoes and avocado, to fill the pockets with and then have some on the side. The cucumber salad, so simple to make, is the perfect side dish for the pockets. We use all the Harissa powder (an African spice blend) in the mayo sauce which just makes it explode with so much flavor. This recipe is a keeper, easy, tasty, and filling.

Pasta Parmesan with Zucchini, Tuscan Herbs & Marinara Sauce – 35 minutes, Level 1, 750 calories per serving

This menu is an all-star recipe, and we’ll totally agree with that title. My granddaughter and parents also ate with us (that’s 5 people this 2 person meal served). I had just made fresh cranberry sauce and my mom provided pudding for dessert. A feast! 10 ingredients, simply cooked either boiled or sauteed and then broiled. The flavors together are perfect.

I wonder if it would even taste better the next day after the flavors had a chance to really meld together but I’ll never find out. There are never leftovers of this meal. It was so good, my 17-year-old granddaughter swiped the recipe card for her collection!

Curry-Spiced Cauliflower And Squash Over Zesty Ginger Rice With Lemon Crema – 35 minutes, Level 1, 410 calories per serving

I’m a big fan of fresh ginger. I can honestly say that I had no idea how wonderful fresh ginger was until I started getting Hello Fresh. I thought ginger only came in powder form in a little jar! I saw it at the grocery store but never paid attention to it. I’m in my late 50’s and it brings to mind the old saying, “you can’t teach an old dog new tricks.” Well, I’m here to tell you, my husband and I, have learned a lot of new tricks (including ways to cook foods and new foods) from Hello Fresh!

The reason I mentioned ginger, in this recipe you use ginger with the rice. And then on top of that, you serve the seasoned roasted squash and cauliflower. And the final topping is a wonderful crema of sour cream, lemon juice, oil, and curry powder. All mild flavors pleasing to the palate.

Hello Fresh never ceases to amuse me! I just loved all three brown bags of ingredients that came in. This week the bags were printed with holiday sayings/pictures. It made me smile. And I like the bags because they are reusable and I do reuse them. Along with the cooking hints from the actual recipe, they also let you know what drink to pair with. It’s definitely a great helpful hint if you drink wine with your meal. Thanks, Hello Fresh!
