A white wine made like a red, this Pinot Gris is a wonderfully unique expression of Méthode Expérimentale.
Au-Delà goes beyond typical winemaking practices, into uncommon territory. Made in what we like to call, “méthode expérimentale”, this Pinot Gris from Witter Vineyard and Camino Alto Vineyard in El Dorado got its color from partial fermentation on skins. While half the lot spent 6 days on its skins, the remaining half went direct to barrel for fermentation. Our winemakers let nature run a bit wild with this small batch, skin-contact wine, and the the result is a unique-hued ‘orange wine’ that skews pink. Enjoy Au-Delà’s more robust nature, and its affinity for fattier dishes like pâté, foie gras and charcuterie.
