Whether served up or on the rocks, the margarita’s many charms are never subtle. Like a sizzling skillet of fajitas, the sight of a freshly poured glass has a way of catching the eye of everyone at the table. This growing gravitational pull at bars and restaurants has led the drinking public’s devotion to grow at an exalted place. Year after year, data scientists proclaim it the most-ordered cocktail in the US; some seasoned expeditioners have even called it the most popular cocktail of all time!

Thanks to years of our own extensive research and observation, we can share what we’ve learned about its basic composition: tequila blanco, triple sec (or agave nectar in Tommy’s style), and fresh lime, all shaken up for a bracing and juicy sip that’ll set the drabbest of days ablaze. And, how could we forget—in certain conditions, if the mood strikes just right, you can plainly see a striking Saturn-esque ring of salt surrounding the cocktail. Oh, but even the greatest legends of our universe can be so much more!

Watch out! The aunts will be marching in unison when word gets out about Sam Jimenez’s highly aromatic plans for margarita month. Not Your Tía’s Margarita was carefully crafted to achieve harmony among unexpected flavors. Juicy bergamot meets sharp ginger in a syrup, cardamom and chipotle perform a spiced-smoky ritual within the salt rim, and tequila and lime—well, they already know each other quite closely. It’s a complete package of easy sipping and a new family (of ingredients) you’ll want to reunite with over and over!

Sam is a 28-year veteran of the food and beverage industry, a crafter of cocktails, an agave spirits educator, and a connoisseur of Mexico’s agave-based spirits. He currently represents small-batch craft distilleries that are working to keep Mexico’s unique liquid culture alive. And you can keep the agave love alive by checking out a few of Sam’s mezcal hits for S&S, the Paloma Muerta and Theobroma!

When fan-favorite mixologist Caer Maiko heard we had our targets set on the cosmos for February, she—in true cocktail queen fashion—got swept away in thoughts of Toby Cecchini (creator of the enduringly popular pink potion) and Carrie Bradshaw (avid consumer/columnist). Margaritas can be raucous party fuel, and also take a chic turn with a presentation giving opera gloved–sipping as opposed to Taco Tuesday. A cranberry-lemongrass shrub is just the ticket to such cosmopolitan fantasies, while tequila blanco waltzes in to usher the experience into another delicious galaxy altogether!

Having returned to her SoCal roots, Caer can now be found managing the iconic Los Angeles gastropub Father’s Office. She is also the co-creator of Daijoubu Pop Up: Super Asian Cocktails, a traveling cocktail experience that pushes culinary boundaries in cocktails by incorporating surprising, unusual, and authentic Asian flavors while creating a space for Asian people in front of and behind the bar. She was also a top-4 finalist (!!!) for US Bartender of the Year at the 2023 Tales of the Cocktail Foundation’s Spirited Awards and has been a veteran S&S alum with many great cocktails to her credit, including the peppy pink Miami Sound Machine margarita riff.

Among the cenotes and spas of Riviera Maya, there’s no shortage of welcoming white-sanded beaches. But for Lindsay Matteson, experiencing the beauty of Playa Paraíso can be every bit as pleasurable when its enticing touch of escapism is crafted to be more portable. Despite its undeniable Mexican attributes (hola, tequila and lime!), you’d do well to think about Jamaica, as well—as this land holds the key to some of this cocktail’s other star ingredients: hibiscus, clove, and allspice. If a marg-meets-sorrel situation sounds bright and punchy to you (and it should!), then lounge back for one extra touch of decadence—a sweet and salty rim of cacao nib blend to complete the paradisial picture inside and out.

Lindsay is a bartender and bar manager who has played a role at such notable bars as the Flatiron Lounge, Pouring Ribbons, canon, and Amor y Amargo, where she served as the head bartender. Most recently she was the bar manager at Barnacle, an Italian aperitivo bar, and the classic oyster joint the Walrus and the Carpenter in Seattle, WA. Today, she consults on bars and teaches internationally on the overlap of hospitality and mindfulness for the bartender. She also paints cocktails and has a book of her art available on Etsy.
