Here’s how to prepare:
- STEP 1 Preheat your oven or toaster oven to 450°F. Unwrap Harvest Bake and remove the seal.
- STEP 2 Place frozen Harvest Bake on center rack in the oven.
- STEP 3 Bake for 22-27 minutes, stirring halfway.
- STEP 4 Let stand for 1-2 minutes. Enjoy.
About the flavors:
Cremini + Smoked Paprika Ropa Vieja
It’s ropa vieja, our way. A smokey, complex tomato and red bell pepper sauce pays homage to the OG while meaty cremini mushrooms keep things hearty. Kale, red peppers, and kohlrabi bring the stewed-for-hours flavor alongside sweet plantains. Rounded out with briny green olives and hot pickled peppers for depth and sunflower, pumpkin, and hemp seeds for texture— the traditional version just might have competition.
Chickpea + Coconut Curry
The bold, warm-you-from-the-inside spices of curry take center stage in our silky version featuring a coconut cream and cashew butter base. Cauliflower, sweet potatoes, bell peppers, and spinach gear you up while green chickpeas and OG chickpeas keep you going. With flavor that brings the umph and veg that brings the heartiness, this curry is like no other.
Gigante Bean + Artichoke Olio
Your neighbor’s spinach dip could never. Hearty Gigante beans (think: jumbo white beans), snappy asparagus, and tender artichokes get tossed in a cauliflower chickpea sauce so luscious, you’ll wonder what else veggies are capable of. Nutritional yeast and porcinis add layers of savoriness while an herb-y hemp seed sprinkle puts the “cherry” on top of our spin on the classic.
Squash + Wild Rice Gratin
