Fresh Pappardelle Verde with Sweet Pea Pistou and Sugar Snap Peas. This pasta recipe was really quick and easy to make! I just had to prepare the pappardelle and cook in it boiling water for about 3-5 minutes. While the pasta was cooking, I started chopping and slicing the snap peas and mint. When the pasta is cooked and the other ingredients are prepped, it’s time to assemble!

I added some parmesan cheese on top and garnished it with a few mint leaves. It tasted good! The mint gives off a refreshing flavor and even my kids loved it too. This is a family-friendly dish, and it’s great if you want an alternative to your usual red or white pasta sauce.

Chow Mein with Fresh Ramen and Stir-fried Vegetables. The second recipe is a Chinese noodle dish! It’s filling and also healthy as it contains different vegetables. My choice of protein is chicken breast fillet, but you can also use pork, shrimp, scallops, or even tofu if you wish.

I cooked the ramen noodles first before stir-frying the chicken in a pan. Then, I cut the vegetables, made the slurry, and put everything together. I love that the vegetables remained nice and crisp. Also, the preparation and cooking time only took about 20 minutes! This is ideal for dinner, and it’s also the perfect alternative to takeout noodles.

BBQ Chicken Corn and Fresh Mozzarella Pizzas with Arugula Salad. Our family loves pizza, including homemade ones. This pizza recipe from Sunbasket is definitely one of our faves – it’s their version of barbecue chicken pizza!

I broiled the pizza until the cheese is melted, which takes about 1 to 3 minutes. It smelled delicious! While waiting for the pizza, you can prepare the salad. Just stir the Italian dressing base and oil, then toss it with the arugula, remaining chopped onions, and a tablespoon of lemon juice. You can add as much dressing as you like and it’s also up to you if you want to season it with salt and pepper.

Our pizza has generous toppings, so it was really filling. For an extra crispy crust, Sunbasket suggests to pre-heat the flatbread before assembling the pizzas. Just use medium-high heat, warm 1 to 2 teaspoons oil until hot, and work in batches if needed. Heat the bread until it’s lightly crisp and golden brown or about 2 to 3 minutes.
