This class opens with an introduction to Gabriela Cámara’s philosophy on food and hospitality. She talks about the importance of food in Mexican culture and how it brings people together. She places value on how you treat food, how you present it, and most importantly how you treat the people who come together to enjoy your food. All of these values shine through her restaurants where she focuses on farm-to-table cooking and creating a family environment. For those who are not familiar with Gabriela Cámara, she opened one of the first farm-to-table Mexican restaurants in Mexico City called Contramar. Her focus was on creating a restaurant that emphasizes the use of organic produce from local farms and seafood from Mexican waters.

To hear Gabriela Cámara tell it, meals are about more than just eating. “I grew up in a family where food was the glue of everything,” she says. “We had important conversations at the table while eating, we made important decisions at the table while eating, important guests were offered food. I have a very direct association between important moments in life and food. Just sharing a table brings people together in a way that few things do.”

In this class, viewers will learn the basic guidelines for Mexican cooking that will allow viewers get creative and improvise with their own cooking style. Viewers will learn how to make a variety of dishes including fresh corn tortillas, tacos, tamales, and tostados de atún.
