My box arrived on my doorstep and was completely frozen solid.

It was kept frozen with reusable ice packs.

Everything was in a big plastic bag and I just placed it directly in my freezer like that! If you are looking for a fancier selection of meat then 3C has a Meat of the Month club, or to keep it basic they have a Ground Beef club. You can also order individual items from their online shop.

I found a thank you card.

Safety info was inside and I thought it was nice that the owners actually signed the card!

85/15 Ground Beef I believe each of these packs is at least 1 pound of meat. So many recipes that I make start with ground beef: chili, spaghetti, burgers, meatloaf, etc. The numbers “85/15” stand for the percentage of lean meat to fat; this would be called “ground round” at the grocery store and is leaner than ground chuck.

Beef Loin New York Strip Steak NY strip is a good choice for grilling because it has a decent amount of marbling for moistness and flavor. You can cook it on the stove too.

Beef Loin Top Sirloin Baseball Baseball refers to the shape of this steak after its been cooked. I wasn’t familiar with this cut so I had to look it up: “A baseball steak is essentially a center cut top sirloin cap steak. This cut of beef is very lean, and is considered very flavorful”. It can be grilled, broiled, or pan fried.

Boneless Beef Chuck Roast A big ol’ roast is perfect for cooking in the oven or slow cooker. It becomes tender after a couple of hours and is a good choice for pot roast. This roast is almost 3 pounds, so I will either use it in two different meals or plan on having a lot of leftovers.

Most of my meat is still in the freezer but here’s a couple of dishes that I have made so far:

I decided to make chili on the first blustery day of fall in my area. I used one of the ground beef packs for my family of four.

I drained the beef in a colander after browning and was surprised at how little fat there was, and that’s a good thing! I added the rest of the ingredients and let it simmer while I made cornbread.

Here’s the chili with some cheese and sour cream. It had such wonderful flavor, wasn’t greasy, and tasted amazing!

The NY Strip Steak had a good amount of fat along the side. I decided to make Steak Diane on the stove top (although this is a great cut to grill) and patted the meat dry before sprinkling with salt and pepper.

I browned the steak in a skillet for 6 minutes per side. I let the steak rest while I made a mushroom sauce to go on top.

I sliced the steak and topped it with the sauce and served it with spicy roasted potatoes and broccoli. The steak was amazing, so juicy and tender and full of flavor.

I have some great cuts of beef stored in my freezer thanks to Chapman Cattle Company! I loved the convenience of having the meat delivered directly to my door, I just had to open the box and stick it all in the freezer. I thought the variety sent was good, I have recipes in mind for each cut. The quality was perfect – the ground beef was very lean and flavorful while the steak was tender and tasty. I would feel confidant ordering from their a la carte menu too and appreciate that they have two different sized boxes to meet my family’s needs.
