The MasterClass Instructor – Wolfgang Puck

This class opens with a mouth watering montage of many of the amazing dishes viewers will get to see demonstrated in this class! Wolfgang Puck opens by talking about how his relationship with food really shaped his cooking. He grew up in a family where food was scarce, so his appreciation and love for food really stems from the understanding of how precious food really is.

For those who are not familiar with Wolfgang Puck, he is a prestigious chef known for his French, Asian-fusion and California-based cuisines. Three of his restaurants have been awarded a Michelin star, and one of these three has also been awarded a second star a year later.

Wolfgang Puck was born in Sankt Veit an der Glan, Austria. His culinary training began at age 14 in the kitchen of an Austrian hotel. He then went to France, where he spent his early culinary years working in some of the most esteemed restaurants, including the Michelin starred L’Oustau de Baumanière in Provence. Wolfgang left Europe at 24 years old and quickly gained the recognition of American diners and critics alike. Wolfgang opened his first restaurant, Spago, in 1982 in Los Angeles, California, where he focused on California-based cuisine.

In this class, Wolfgang Puck wants to share his experiences and inspire others to get into the kitchen and start cooking. He opens his class with two great foundational lessons where he talks about understanding your palate and how to use seasonings and oils to spice up any meal, along with a lesson on his essential cooking tools. The class then jumps right into an array of amazing recipes that teach a variety of techniques including Farro Salad with Roasted Carrots which focuses on how to use amazing ingredients from the farmer’s market and a restaurant level pepper steak with red wine sauce. He even has a lesson on great cocktails that are great to recreate when hosting a dinner party!

MasterClass Cooking Key Takeaways

Wolfgang Puck has created an excellent class that really provides some amazing insights to his own journey and his cooking philosophy. The recipes covered in this class range from a simpler fresh salad to entrees that he cooks in his own restaurants. Not only does Wolfgang share his tricks of the trade when making different meals, he shares his journey, business philosophy, and culinary philosophy. He really takes pride in using the best local ingredients from your own garden or the farmers market and then being able to season and cook them to bring out their fantastic flavor. This class really demonstrates how you can accomplish this at home!

I really want people to get inspired and get into the kitchen and start cooking. I want them to say, ‘I can do it. If Wolfgang can do it, I can do it.’ And I know everybody will be able to do it.

He really places the focus on seasoning and how to use a variety of spices, including being able to master the use of salt and pepper. One of the lessons that was so simple but also demonstrated Wolfgang’s view on the importance of understanding your palate, was the lesson that focused on his staple spices, seasonings, oils, and vinegars and how to use them. In this lesson he demonstrates how to season a pea soup, which by itself can be boring and bland, but with good seasoning can be something special.
