These lessons include a wide variety of techniques, including big-pot blanching, glazing, braising, pickling, roasting, baking, meringue, boiled eggs, omelets, pasta dough, and how to make different pasta dishes.

What I really enjoyed about this class were the lessons on eggs. He takes something so simple and brings new life to the techniques. He explores many different techniques that range from perfecting scrambled eggs to making custards and meringues. Even when working with the simplest techniques, he brings awareness to the details and unique properties of each ingredient.
