Hello Fresh is a meal kit subscription box with complete recipes and ingredients to make 3 meals every week, with each meal feeding either two or four people, depending on the plan you choose.

Though it is a subscription, you can pause your deliveries when needed – whether you are out of town, have other dinner plans, or just aren’t in love with that week’s selections. The standard subscription provides high-quality meats (free-range chicken, antibiotic meats, etc.) to use in the recipes.

This review covers the Vegetarian box! Though we do eat meat, we cook vegetarian three times a week. Thankfully, Hello Fresh has a vegetarian subscription for both casual and dedicated vegetarians.

The bags used by Hello Fresh keep all the ingredients for the recipes in order, and they stack nicely in the fridge. Within each box, everything but the largest vegetables is separately packaged and is packed at the bottom. Condiments and canned goods are provided in high-end, commercial packaging. Hello Fresh usually provides spices in their own, pre-measured branded packaging.

Crispy Chickpea Tacos – 30 minutes, Level 1, 781 calories per serving


We’ve (my husband and me) have had this meal before and it’s so good. What’s amazing to me are the ingredients, for one thing, there aren’t many of them and the second thing is it just doesn’t look like it’s going to amount to much. And yet the end result is absolutely scrumptious!

Thanks to Hello Fresh I’ve learned to roast just about anything and it’s so good, including chickpeas. Roasted chickpeas make an excellent mid-day snack.  Yummy, nutritionally sound, easy to fix and satisfying.

When you see my pictures of the tacos you’ll notice I’ve got 1/2 tortillas on my plate. Hello Fresh sends you more than you need some ingredients in their 2 serving meals.  We’ve learned that almost everything that they send too much of, we include in the meal.  No leftover ingredients that we need to figure out how to use.

This is a great meal that is so easy, I just know you’ll love it as much as we do.

Creamiest Mushroom Ravioli – 30 minutes, Level 1, 510 calories per serving


When making Hello Fresh meals for 2, we split them into 4 plates because at our age we just don’t burn off all the calories or need all the food. So once a week we, my husband and I, will share a meal with my parents. While plating the food 2 plates received 4 raviolis and 2 received 3. My dad pipes up and says he’ll take a plate with only 3 because he just doesn’t need all the food. He accidentally ate 4 raviolis and there wasn’t a drop on his plate left. Of course, I teased him about getting the larger portion and all he could say was how much he liked it!

This recipe is an all-star recipe, a favorite chosen by home cooks and I can see why.  It only takes about 30 minutes to cook, doesn’t dirty up a lot of dishes (huge plus) and is so delicious. It’s a nice flavor with a creamy sauce of Parmesan cheese, veggie stock, sour cream, parsley and a pinch or more of chili powder.  Doesn’t that sound good?  You can add as much chili powder as you’d like.  Add to the sauce all the yummy veggies and ravioli and BAM, a dinner fit for a king or in my case, dad. This meal was definitely dad approved!

I expected nothing less than what we have got, a very delightful treat with a great mix of healthy tasting ingredients. A 100% guaranteed classic pasta meal!

Pesto Flatbread (aka Posh Pizza) – 30 minutes, Level 1, 670 calories per serving


This is another one of Hello Fresh’s recipes that takes so little ingredients to make a really fine meal.Seven ingredients are all that it takes.  And this is one meal that is perfect for entertaining, it could easily be cut into smaller pieces to serve as finger foods.  My only suggestion would be to shred the mozzarella and sprinkle it on top of the veggies to “anchor” them down so they wouldn’t fall off.


So anyway this flatbread is layered with a great pesto (what can go wrong with pesto?  Nothing!), then the cheese and finally the veggies.  Oh yum.   The use of the sun-dried tomatoes was new to me but I’ve learned a little bit of them carries a punch of flavor. Hello Fresh is great about recommending a wine to pair with their meals.  They recommend Abbiocco Umbria Rosso, 2015.
