Aji Amarillo is a staple in Peruvian and Mexican cooking. It is spicy and a bit fruity.

Peruvian Pink Salt is popular for its strong flavor. Commonly used as a seasoning salt.

Chile-Limon combines the heat of chili and the tartness of lime. Can be used on fruits and vegetables.

Aji Panca has a smoky and berry-like taste. Indeed a unique chili seasoning flavor.

Ceviche Mixto features Piquant Post Aji Amarillo, Aji Panca and Peruvian Pink Salt. Living so close to Mexico we have Ceviche at most of the local taco shops, ours features shrimp and no fish. I am looking forward to making this for my daughter and I (my husband isn’t a seafood fan).

Chili-Lime Chicken with Peruvian Pink Salt, Chile-Limon and Aji Amarillo. I can’t wait to marinate some chicken breasts (legs are too fatty for me) and toss them on the grill. We like a little heat so we might be adding a little more of the Aji Amarillo spice. I hope mine is as picture worthy as the included card.

Lomo Saltado (Beef Stir-Fry) once again featuring Aji Amarillo and Peruvian Pink Salt. I have to say there are a few ingredients that have me a little shy to try this meal: roma tomatoes and oyster sauce. I don’t like warm tomatoes and oyster sauce might be the worst thing I have ever tried to cook with, but I will put my big girl pants on and try because it’s fun to try new things. The Aji Amarillo is by far my favorite spice this month.

Peruvian Potato Salad with Aji Amarillo and Peruvian Pink Salt. I’m going to admit that I started with this recipe because it was by far the easiest one… boil potatoes and mash with a few ingredients…

Potatoes, olive oil, lime juice and Aji Amarillo… this looks nothing like my normal potato salad but it smells pretty amazing.

My finished masterpiece! Now I would never think of pairing tuna with potato salad but I was pleasantly surprised how well all the flavors mixed. The highlight for me had to have been the avocado slices. I will be adding this to my lunch rotation.
