Pondicherry is a melting pot of different cultures, including Romans, Chinese, Dutch, English, and French. However, the strongest influence that remains at present and evident even in the local cuisine is the French. To introduce us to the unique flavors of Pondicherry, RawSpiceBar included the following spice blends in this month’s shipment: Indo-French Vadouvan and Peppercorn Chai.

Since it’s Thanksgiving season, we also received Unpumpkin Pie Spice in the package. Yum! It’s a versatile blend that you can put into your coffee, mix to your ice cream, or add to your cookies and pies. Very healthy too!

RawSpiceBar’s Indo-French Vadouvan was packed with strong flavors and aroma! Ingredients include shallots, onion, garlic, fenugreek, fennel, and curry leaves.

Vadouvan is commonly used as a base for curry, but you can also use it to level up your scrambled eggs and squash soup – as suggested in the recipe cards.

RawSpiceBar’s Peppercorn Chai is the perfect add-on to your hot milk tea fix. Chai is a staple of Indian cuisine. Very aromatic!

If you’re not a milk tea fanatic, you can still use Peppercorn Chai to add flavor to other dishes like the Apple Clafoutis featured in the recipe card.
