This shortbread is a great example of what an artisanal tastes like and what mainstream tastes like. As a lover of road tripping I have stopped at my share of gas stations, 7-11’s and corner markets and I have purchased my share of sweet and salty treats from all over the country. Keebler Sandies shortbread cookies were always good on a long stretch of road but after trying the shortbread from Sugarbird Sweets the differences between the two are vast. Mainstream shortbread taste processed, sugary, crunchier than they should be… and the ones from Sugarbird are delicate, flakey, buttery and balanced in flavor. You can taste every ingredient (there aren’t many) because they have been baked together with purpose and precision. They may be simple but I simply can’t get enough of them. These cookies are also wonderfully nostalgic of vintage times when shortbread was homemade and given to houseguests with a cup of wafting tea.
