Hello Fresh is a meal kit subscription box with complete recipes and ingredients to make 3 meals every week, with each meal feeding either two or four people, depending on the plan you choose.

Though it is a subscription, you can pause your deliveries when needed — whether you are out of town, have other dinner plans, or just aren’t in love with that week’s selections.  The standard subscription provides high-quality meats (free-range chicken, antibiotic meats, etc.) to use in the recipes.  Though we do eat meat, we cook vegetarian three times a week.  Thankfully, Hello Fresh has a vegetarian subscription for both casual and dedicated vegetarians.  This review covers the vegetarian box, which featured a recipe by Jamie Oliver!

The boxes used by Hello Fresh keep all the ingredients for the recipes in order, and they stack nicely in the fridge.   Within each box, everything but the largest vegetables is separately packaged.  Condiments and canned goods are provided in high-end, commercial packaging.  Hello Fresh usually provides spices in their own, pre-measured branded packaging.

Hello Fresh has great instructions, and they are easy to follow even if you are an inexperienced cook.

 Peach & Nectarine Orzo Salad With Feta, Cucumber, and Mint. 30 minutes, level 1, 517 calories per serving.

What a perfect summer salad!  Oops, did I say perfect?  Darn, meant to say perfectly light summer salad. 🙂  And this is why I’m not a chef, I’d never have thought to broil nectarines and peaches but broiling them brought out the sweetness. I live in northwest Florida fairly close to the Georgia line and we get a lot of really great peaches.  I can’t wait to try broiling them for some other recipe or just by themselves…oh, just got a thought…imagine broiled peaches on French Vanilla ice cream. WOW, now that sounds great.  Put that on my cooking bucket list.

We really enjoyed this recipe, it was so easy and quick to make.  You could have a child help with this one.  I’ve been helping one of my granddaughters (9 years old) to learn to cook, we have so much fun together and she’s not wasting her summer away.

The flavors were amazingly light and the orzo provided a hearty base.  I added nothing, no other dressing other than the squeeze of lemon in the recipe.  I did change the mint for basil.  No way am I eating mint.  That’s the wonderful thing about Hello Fresh meals, if you don’t like something change it.

Caramelized Veggie Skewers With Summer Corn Relish and Herby Couscous. 35 minutes, level 1, 563 calories per serving.

If you look at the pictures of the completed dish you’ll see this is very colorful. Reds from the red bell pepper and tomato, yellow from the corn, white from the feta and couscous and mushrooms and finally green from the parsley and zucchini.  Food is supposed to look good, the better it looks the better it is for you, google it!  Anyway, this is one of those dishes, it looks good and you want it.

Hello Fresh has recently sent several little jars of the dijon mustard and we’ve found it quite spicy hot.  If you have a sinus problem eat some, problem solved!  So I was quite leery when I saw the jar again but in the marinade it was quite mild.  I loved this marinade, I’ll be making it again.

So many fabulous flavors in this dish.  I adore summer and all the fresh produce and I am especially crazy about corn in the summer, just can’t seem to get enough of it even if I have to cut it off the cob because of my braces!

This tops the delicious scale at 10.    I’m just realizing quite a few of the last recipes/food have been a 10.  Hope that doesn’t get old but they have deserved the 10s.

Jamie’s Sicilian Cauliflower & Chickpea Stew With Fluffy Couscous. 40 minutes, level 2, 699 calories per serving.

Another good one by Jamie. This was a very hearty meal.  We only ate a half and I made 2 lunches out of the leftovers for tomorrow.

Now let me tell you what went wrong!  I used only half of the crushed red pepper flakes and made the mistake of telling my husband near the end.  He said, “let’s use it all.”  And like an idiot I listened to him and dumped the remaining red pepper flakes in.  Boy was that hot, I’m a mild person, so this was hot for me.  After I got over the heat I loved all the flavors especially the cinnamon and raisins, what a delightful addition.  I also like texture, I don’t want pure mush so I really enjoyed the texture of the onions along with the couscous.

This is another 10 for Jamie and a 5 for my husband!  Next time, I use only half of the red pepper flakes and he can add whatever he wants to his plate.
