Hello Fresh is a meal kit subscription box with complete recipes and ingredients to make 3 meals every week, with each meal feeding either two or four people, depending on the plan you choose.

Though it is a subscription, you can pause your deliveries when needed — whether you are out of town, have other dinner plans, or just aren’t in love with that week’s selections.  The standard subscription provides high-quality meats (free-range chicken, anti-biotic meats, etc.) to use in the recipes.  Though we do eat meat, we cook vegetarian three times a week.  Thankfully, Hello Fresh has a vegetarian subscription for both casual and dedicated vegetarians.  This review covers the vegetarian box, which featured a recipe by Jamie Oliver! The boxes used by Hello Fresh keep all the ingredients for the recipes in order, and they stack nicely in the fridge.   Within each box, everything but the largest vegetables is separately packaged.  Condiments and canned goods are provided in high-end, commercial packaging.  Hello Fresh usually provides spices in their own, pre-measured branded packaging.

Hello Fresh has great instructions, and they are easy to follow even if you are an inexperienced cook.

 Jamie’s Baked Ricotta & Tomato Orecchiette With Broccolini, Fresh Oregano & Chili. 45 minutes, level 2, 634 calories per serving.
Jamie, Jamie, Jamie!  You sure didn’t disappoint with this recipe.  Full of deliciousness and full of color, yum.  And I’m just plain full even if I didn’t eat half the recipe.  I ate about a fourth and left a fourth for tomorrow’s lunch.  Plenty of good eatin’.

Jamie taught me another way to roast vegetables and cheese, with a dressing no less.  And who knew that you could roast ricotta cheese?  I sure didn’t but then I’m not exactly creative in the kitchen but with Hello Fresh’s chefs I’m learning all the tricks.

This Mediterranean dish with creamy ricotta, crunchy broccolini and roasted tomatoes deserves a 10.  So scrumptious all around.

My husband and I often travel to Texas to visit grandkids in San Antonio and Dallas to visit 4 of our grandkids.  When we’re in San Antonio we fill up on the real Mexican foods.  No chain restaurants for us but with this recipe who needs the San Antonio?  Other than the grandkids that is.  This was some of the best tacos we’ve ever eaten.  So flavorful and delightfully delicious.  The filling of caramelized onion, sweet potato and corn mixed with honey, cumin and lime was fabulous but then you top it off with the best avocado-lime crema.  BEST EVER!  I could eat that stuff on anything. Simple to make and simply wonderful.

I’ll let you in on a little secret.  We make almost everything just the way the recipe says.  There are a few things I do differently.  With this recipe it said to use only 1/2 of the beans and I did that in the pictures and the first couple of bites and it was great.  Then I added the rest of the beans, just as delicious.  It really didn’t change the taste that much because the crema was so wonderful.

As previously mentioned, my spouse gave this a 10.  And I concurred. DIEZ.

Summer Succotash Stuffed Peppers With Quinoa, Feta, And Basil. 35 minutes, level 1, 513 calories per serving.

Many of you are probably like me and just can’t comprehend the senseless killing in Florida last night.  My mind wanders on days like this and it’s good to have an easy dinner on hand.  I didn’t have to gather ingredients, they were all there.  I didn’t have to really think about what I was doing, I just followed the directions.  That’s what I did tonight while watching the news.  And even while not paying attention to the meal, it turned out perfectly.

I’ve made stuffed peppers before but the recipe was more complicated.  This one was easy and we really liked it.  Dennis, my husband, is really enjoying the corn in the recipes, says it adds a touch of sweetness which he likes.  He also mentioned liking the tang of the feta. Gosh, we like that stuff!
