RawSpiceBar is a monthly spice blend subscription. Every month for $6 you’ll receive small batch, freshly ground spice blends by top chefs for home cooks, plus recipes to create authentic cuisine with the spices. They are launching the shop soon to buy more of your favorite spices!  I really look forward to seeing their inventory — the subscription picks have been great, and I want to see their whole catalogue of blends.

Each themed monthly installment comes with three spice selections, a recipe featuring each spice, and welcome card introducing the featured cuisine. Each spice pack describes the component spices, as well as giving some typical applications should you want to experiment with your own recipes.

This month was an Indo-Persian theme!  The spices included this month were (R to L) Parsi Garam Masala, Kala Namak Cumin & Chile, and Rose & Cardamom.

Parsi Garam Masala:  This version of the spicy all purpose garam masala used throughout India is blended to complement the tangy and sweet flavors of Parsi cuisine.  The blend has lots of green and black cardamom, giving it both a menthol/minty and smoky quality, balanced by the seeming sweetness of fennel and fenugreek.

Kala Namak Cumin & Chile: We can’t get over the fact that this sulphurous salt smells like farts.  It is smoky and spicy, but so stinky that we put it in the garage.  About the only dish I could picture using it in is deviled eggs.

Rose & Cardamom:  This blend leverages the versatility of green cardamom, pairing it with rose and ginger, two other flavors that make superb background notes for sweet dishes.

The spices always come with two double-sided cards which provide background on the featured food culture, and a [usually traditional] recipe incorporating each spice blend.  The Rose and Cardamom blend is to be used in Kulfi, a traditional Indian pudding.

The recipe for Jardaloo Ma Murghi uses the Parsi Garam Masala.  It is a chicken curry in the Parsi style, loaded with onions and apricots.

The sulfuric Kala Namak, Cumin & Chile is used for a Kachumber salad, a simple blend of tomato, cucumber, onion, and mint.

RawSpiceBar also includes vegetarian recipes on their site. You provide the fresh ingredients and staple items for the included recipes.

You couldn’t beat Raw Spice Bar for freshness and potency of spices without grinding your own.  I usually love receiving the packs of spices and breathing in the aroma — they are always vibrant and blend into beautifully balanced medleys, but we can’t get over that salt!.  The recipes are great suggestions for using unfamiliar combinations of spices, but the spices will inspire you to experiment.
