Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries whenever you’d like. They offer both vegetarian and regular (omnivore) boxes – this is the vegetarian box!

Hello Fresh instructions have very nice illustrations, are clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first. Even a novice cook can follow them. Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated. I like that the outer packaging of the box is recyclable.

8 Year Old’s Review Photo – So cute!

In a word – awesomeness!  Tonight I had my 8 year old granddaughter and she wanted to help.  Not only was this recipe varied in preparation and cooking techniques it was perfect for teaching.

We discussed how to chop items without a knife, zest lemons, burn a candle to get rid of the onion fumes, shave vegetables, toss a salad and so on. Sweet Potato Pita Wraps with Golden Raisins and Shaved Vegetable Salad prep

She liked shaving the vegetables and the smell of the cumin best.

She helped with almost all of it and even so, sadly, I couldn’t talk her into trying any of it.  Patience is a virtue!

I must admit, I loath mint so I left that out of my salad.  My husband said all he could taste was carrot.  I could taste each item, very mildly blended and with just a hint of lemon.  I loved the natural flavor of the carrots and cucumber.  I think this is a perfect salad for summer time.  It could be paired with a tall glass of homemade lemonade.

The sweet potato pita was very tasty and filling.  The description calls its sweet and smoky, there was the sweet but smoky, I’m not so sure about that.  They were wonderfully roasted, and I’m thinking if I cut them like french fries, this is the way to cook them.  The blend with the other ingredients was right on.

My favorite soup in the whole world is Tortilla Soup!   I was so excited when I saw this soup recipe. And when I saw the tortilla chips were from the brand Food Should Taste Good, I knew I was going to love this dish.

Of course saying you love tortilla soup is like saying you love chicken noodle soup and everyone knows there are a gazillion ways to make chicken noodle soup.  The same is for tortilla soup, I like some versions a lot better than others.  Well, this is a version we liked.  

I would call this a simplistic version, not too many ingredients and just the right combination of flavors.  Maravilloso!  I liked the toppings that were chosen: avocado, cheddar cheese and crushed tortilla chips but I can think of many more: lime wedges, sour cream, chopped cilantro, sliced green onion.  Oh, and what about sliced black olives. This recipe could have easily served 4 people and if you wanted you could have stretched this meal by serving flour tortillas

I give this a 10!

This is a keeper as my husband would say.  We love lots of vegetables and this recipe gives them to you with the sauteed mushrooms, green beans and carrots.  It definitely was not skimpy on the veggies.  I hadn’t cooked to udon noodles before but have had them in restuarants.  They cook quickly so they could easily become a staple for those nights that you don’t have a lot of time.Veggie Lo Mein with Mushrooms, Green Beans, and Sweet Ginger-Soy Sauce
