Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries whenever you’d like. They offer both vegetarian and regular (omnivore) boxes – this is the vegetarian box!

Hello Fresh instructions have very nice illustrations, are clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first. Even a novice cook can follow them.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated. I like that the outer packaging of the box is recyclable.

This recipe looked really good until I saw the collard greens.  Collard greens are just downright gross, I’ve never understood why people eat them.  I live in northwest Florida (it is also known as LA – lower Alabama) and have for most of my life but I don’t eat greens!  So many southern ladies have told me I would like them if I tried theirs so I did and they’re nothing but yucky greens with lard or as southerners used to say “seasoning”.  Hush my mouth!

Even my husband, who eats almost anything, doesn’t care for greens.  We weren’t looking forward to this but I made it anyway.

It was delicious, the greens didn’t taste gross, they were actually good.  And who ever heard of putting Feta on black eyed peas?  Not here in the south!  This rated a 10.Israeli Black Eyed Peas with Fenugreek, Roasted Eggplant, and Feta

In case you’re wondering, I’m a military brat, was raised in several countries and states but my people are from Pennsylvania and my husband was born and bred in Detroit.  We’ve both in the south for quite a while and have adopted the southern tradition of eating a mess of black eyed peas on New Year’s Day.  We skipped the part about eating a mess of greens but I’m saving this recipe for New Year’s Day.  So I’m going to assume because I’ll finally be eating correctly in the southern style that 2016 will be a great year!  Ya’ll have a nice day now, ya hear.

Potato Latkes & Marinated Beet Salad

Well, this was a total surprise.  Again, tonight, like last night, we had something that didn’t even begin to look like the picture presented.    According to Google latkes are supposed to be a potato pancake.  What we had was a fancy hash brown.  Now with that said, we LOVED it.  I fry very little food so our “latkes” were a great treat for us and we scarfed them down.  And with sour cream? Who could not enjoy that scrumptious bit of fried potato.

We also liked the beet salad.  Marinating just a little bit helped tone down the strong flavor of the red onion.  I paired this meal with baked salmon with just a hint of basil , salt and pepper.

This was a meal fit for a king deprived of fried foods!  I give it an 8.5 only because there is no way you’re going to get the picture presented of the latkes with the ingredients given.  Now if they rename it Hash browns and Marinated Beet Salad we give it a 9.5.

Quinoa Veggie Loaf

The was very good and we talked a lot about the various aspects.  Our first comments were about the roasted radishes.  Neither of us had ever had roasted radishes before.  My husband commented about how the roasting took the edge off of them.  We will be having a lot more roasted radishes from now on.

The veggie loaf, well ours looks nothing like their picture.  Ours was more yellow, not browned on the edges and there was NO way I could slice my loaf like they did.  Frankly, I was lucky mine didn’t crumble when coming out of the little tin pan.  There wasn’t enough of a binding agent in mine. With that said, let me reassure you it was quite tasty especially with the very easy Ketchup Pan Sauce. My husband made sure to tell me to scrape every bit of the sauce out of the pan.

Quinoa Veggie Loaf with Roasted Radishes and Crispy Broccoli close upWhen I served this to my husband we split the roasted broccoli & radishes and split one of the tins of the loaf.  While making the veggie loaf I filled the 2 tins they sent me and then filled another one!  So the loaves could actually feed about 6.

Overall we loved this recipe and it rates a 10 with us.
