Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries whenever you’d like. They offer both vegetarian and regular (omnivore) boxes – this is the vegetarian box!

Hello Fresh instructions have very nice illustrations, are clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first. Even a novice cook can follow them.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated. Learned a bunch tonight while making this.  First was roasted squash, I’ve always peeled it and if you’ve ever peeled acorn squash you know what a pain that is.  This was with the skin on and we ate the whole thing.   I thought the skin even cooked would be too tough, it wasn’t.  Second was that kale can be eaten without being cooked and third was the Parmesan frico was so easy.  Curry-Roasted Acorn Squash & Kale Salad with Parmesan Frico, Apple, and Honey-Balsamic Vinaigrette

My granddaughter was eating dinner with us and I knew she wouldn’t try anything so I bought a rotisserie chicken from a local store.  This was a good combination.  She was curious as to the Parmesan frico and I encouraged her to try one and wouldn’t you know that when it came time to serve dinner there were several missing.

We found the acorn squash spicy yet delicious.  The added honey made it very good.

We gave this dinner an 8.

In a word:  delizioso!  Mamma mia this was good.  My husband got excited just because it had linguine in it.  I loved the roasted eggplant, which was soft but not mushy.  The sundried tomatoes balanced out the sauce and I’m a huge fan of basil.  One small mishap, there wasn’t any chili flakes in the package but who doesn’t have those on hand.  My husband puts them on 60% of his meals.Roasted Eggplant Linguine with Sundried Tomatoes, Basil, and Chilies.

This recipe only has 8 ingredients but is packed with flavor and texture.  This was a perfect 10 on our scale.

We had to Google polenta as we had heard of it but never tried it.  I also decided to cook all of it because it’s just too easy to heat up the next day.  We both agreed this is a fancy version of fried cornmeal.  We are wondering why southerners aren’t crazy about it since they adore cornbread and love everything fried!  Well, in the end we are so glad we seared all of the polenta and a good thing, too.  We ate all but 2 slices.  My mushroom ragu didn’t quite cook down so we had sauce on our plate and used the polenta to sop it up.  Mmmmm, mmmm!

We weren’t looking forward to the arugula salad as we find the arugula just too bitter for our tastes but with the balsamic vinegar and olive oil dressing, it was much more mild in flavor and we enjoyed it.

We found this dinner amazingly easy and delectable.
