Company’s Comin’ gives you a quick fix for when you need to make a hearty meal in a hurry.  Each soup or casserole mix comes with pre-mixed spices and other ingredients.  You add some ingredients of your own, most of which are shelf-stable, have a long fridge life, or are otherwise easy to keep around.  The result is a very quick meal that has a home cooked and satisfying taste.  Company’s Comin’ offers four different ordering options:

4 soup mixes – $29.95

4 casserole mixes – $29.95

2 soups and 2 casseroles – $29.95

3 casseroles, 2 soups, 2 cheese balls, and 2 dips – $59.95

Our order came with a handy tote to keep the mixes in or use as a reusable grocery bag.

Our four kits.  We received the two soup and two casserole mix.  The tote that was sent along also folds into a cute strawberry for easy storage!

The casserole mixes came in cute bags and already included the noodles.

IMG_8336 Mexican Casserole Mix:  This had great Mexican spices, and the topping of chips and cheese (I used tortilla chips and colby-jack) made the dish quite impressive.  We served it without a side, as the noodles and beans made it quite substantial even without additional items.

Chicken Pot Pie Casserole Mix:  This dish requires some canned chicken, frozen veggies, and crescent roles.  I used some frozen stir-fry veggies (omitting the water chestnuts) and frozen peas for the veggies.  The recipe suggests adding 8 oz of cream cheese for a creamier sauce — we added the 2 oz hunk we had on hand.  The casserole cooks beautifully, with the rolls forming a nice crust on top.  You could also break up the dough and place it on top like dumplings for another look.  The dish was really tasty and had a great gravy.  It was highly-seasoned, though, so I am glad we added the cream cheese to cut the salt a bit.

The humble-looking soup mixes also produced hearty dishes with a few add-ins.

Grandpa Bo’s Baked Potato Soup Mix:  Really delicious.  I added some insides from baked potatoes we had leftover in the fridge, plus the optional sour cream and cheddar cheese suggested in the recipe.  It made a really creamy and rich soup.  The seasonings complemented the potatoes well.

Confederate Chicken Enchilada Soup Mix:  Mmmmm…  Don’t let the name turn you off if you are a Northerner.  This soup has a great Southwest flavor and a nice texture.   The canned chicken plays really well in soup and made for the most tender “shredded” chicken imaginable.

We enjoyed these dishes a whole lot!  The recipes were simple, though the instructions were a bit terse, requiring some common sense.  The ingredients called for are commonplace, and you probably have them in your fridge most of the time anyway.  The use of shelf-stable canned chicken makes these dishes easy to have ready on short notice.  The flavors were great, the prep easy, and the dishes were filling and possessed of an attractive presentation.  Accessible dishes with appropriate levels of spice and nice textures.
