We are omnivores, but I’ve been looking to expand on my vegetarian cooking repertoire. Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries whenever you’d like. They offer both vegetarian and regular (omnivore) boxes – this is the vegetarian box!

Hello Fresh recently redesigned their menu cards, and the instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated.

While cooking my youngest daughter came in and told me that “something smelled delicious.  I could smell it all the way outside.”  This from the daughter who eats very little vegetables.  The dish was colorful as well as tasty.  The flavors remained distinctive being delightful to the palate.  The dish could feed 3-4.  My husband and I like to rate new recipes on a scale from 1-10. Anything below an 8 gets tossed as there are way too many good recipes to try.  This is a 9.5.  I’ll make this again.

I realized tonight that the plastic containers that the food comes in is recyclable.  That’s a nice touch.  My husband commented that the arugula in the salad brought back wonderful memories of eating dandelion salad at his grandmothers.  The salad only had 3 ingredients, arugula, almonds and dressing.  Simple salad yet very flavorful. The tartines had delicately light flavors.  This dish would make a great hors d’oeuvre.  For our dinner we paired it with grilled salmon.  The salad was a 10 and the tartines an 8 on our scale.

I am definitely becoming a chef with these recipes.  The detailed directions include definitions and methods I’ve never tried.  Tonight I made the ratatouille at home and then took it to and elderly friend and her daughter.  We paired this dish with Crispy Prosciutto-wrapped asparagus and French bread with bread dipping oil.  What a feast!  The first comment was about the tortellini and how they loved it.  The vegetables were savory and the amount of food meant for 2 was very generous.  Our elderly friend loved the eggplant.  Our friend’s daughter loved the recipe card that included a ruler on one end of the card.  Note:  they did forget to include when to add the diced tomatoes and chopped thyme into the pan.  I added it at the same time as the roasted vegetables.  This recipe rated a 10.

What a wonderful set of dinners that came this week.  You think you know how to cook and then along comes something different! This was a really pleasant surprise.  I’m very excited about next week’s dinners.
