Creative French, Mediterranean, and Japanese-inspired dishes in this week’s selection.  Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Take $40 off your first box with coupon code 7UT7K8. Hello Fresh is a subscription, but you can pause your deliveries and choose alternate meals (at least for the Classic box). There’s also a vegetarian box available. This is a solid meal subscription box with easy and accessible recipes.

Hello Fresh recently redesigned their menu cards, and the instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated and others (and you can see that you are not getting food service condiments from a number 10 can).

Pan-Roasted Salmon with Mustard-Butter Bean Salad:  this dish displayed excellent contrasting textures — the fresh sugar snap peas retained a wonderful crispness that paired well with the tender zucchini and the creamy mouth-feel of the butter beans.  The salmon, as with all Hello Fresh meats, was great quality.  It was firm and fresh, and it was not overly fishy or oily, so it was a great accompaniment to the delicate flavors of the bean salad.

This is a “one pan” meal (albeit with setting aside and reintroduction of components); I cooked the salmon last so the salad remained vegetarian for sharing.  The majority of the Sir Kensington’s, cute little jar and all, is yours to keep for other applications too!

Spicy Pork & Kale Soup with Udon Noodles:  this dish was a home run.  Asian noodle dishes are always welcome, and this one had great flavor and plenty of noodles — it is probably better described as a noodle dish than as a soup, because there were more than enough noodles to bury the broth.

Great dish for noodle lovers, and this variety of kale was surprisingly tender.

Spicy Poblano Bolognese:  this was was a nice take on an Italian staple.  The sausage was great quality (we’ve never found any hard or grisly bits in Hello Fresh’s ground meats or sausages).  The dish was exceedingly simple to prepare and rendered a hearty tasty dish.

It was milder than expected, but enjoyed nonetheless.  I liked the use of thyme to season the dish rather than a scattershot “Italian seasoning” approach.

To me, Hello Fresh is one of the easiest meal kit subscriptions out there. This is not a bad thing and it’s one of the reasons we enjoy it so much. Take $40 off your first box with coupon code 7UT7K8.
