I ordered Hello Fresh this week just for me. Sometimes I order for me & the kids, sometimes just for me, depending on the menus. Obviously when my husband is home, I get it for the two of us!   Hello Fresh is a subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. You can pause easily although they have made it so you have to be unpaused to see the recipe choices. This is new, and semi annoying, as I base whether I am getting the box on the meals! But I couldn’t resist the meals this week at all so of course I ordered.

Hello Fresh Classic Box Review

Indian Spiced Chicken with Israeli Couscous

Spiced chicken served with toasted Israeli couscous and wilted spinach. This was delicious and I loved the almonds. I forgot them on my leftovers so I ate them with ice cream 🙂 This was SUPER easy to make. The only thing I would have changed is where to wilt the lettuce. It didn’t wilt when I stuck it in with the couscous so I stuck it in my chicken pot (enameled cast iron). Wilted in a FLASH!IMG_5392

I felt guilty eating this entire portion. It was gigantic. I should have split this meal in three!

Penne with Pancetta, Peas, and MintIMG_3693

I probably made this first, because fresh peas have a propensity to get icky quickly, and I was hungry but didn’t want to fool much. This had a ton of ingredients but was super simple. The peas were perfect, as was the mint. And the flavor combo was so excellent! I overcooked the penne because I wasn’t paying attention, but it didn’t seem to matter!IMG_5412

The sauce was so simple – a little stock concentrate, sour cream, and parm. Oh and a tad bit of pasta water. I will make this again. it was a great way to make this kind of sauce without being fiddly. I really loved this recipe.

Chiles Rellenos with Rice

I have a mild rellenos obsession. I must order rellenos when I go to a tex-mex joint. These are NOT really chiles rellenos, but they were tasty. Obviously it’s quite literally a stuffed chile but it’s not, you know, BATTERED AND FRIED. That’s ok! Usually I get the cheese stuffed rellenos and having a meat stuffed one was good. The sauce wasn’t quite flavorful enough for me, or spicy. So I added a bunch of jalapeno Tabasco sauce, which fixes everything. This was a fun dish but not “chiles rellenos,” as in, I would totally cook this again but call it something else. The ground beef they send it super high quality, I always find it remarkably tasty!!IMG_5480

I forgot the cilantro when I reheated my second pepper (everything works great reheated btw) so I stuck it on a quesadilla to eat with it. The kids snaked most of my rice!!

Yum yum in my tum, this is always a great box! Makes me hungry again, and I swear I just ate!
