Coconut Flour Mini-Donut Birthday Tower

I have promised these coconut flour mini-donuts for months, and they finally graced our table during my birthday party this weekend. Mini-donuts are a fantastic alternative to a traditional birthday cake for a small celebration. Easy, delicious, and there are no leftovers!

I picked up a mini-donut maker a few months ago when it was on sale for $10 (mine is the Nostalgia Electrics, but the Sunbeam has better reviews). After trying the included recipe (trust me on this – don’t!) I knew I wanted a smaller less carb-heavy batch. I wanted to make a mini dessert, not diabetes! Because kids will eat the donuts until they are all gone. Trust me on that too. It took some trial and error, but this is what I came up with. Complete recipe on the bottom!

I elected to use coconut flour instead of regular flour. It is relatively high in protein and low in carbs and of course smells amazing as it bakes. You need a ton of eggs when you bake with coconut flour and not that much flour at all. It binds it together and the coconut flour expands. We measured all the dry ingredients in one bowl: coconut flour, baking powder, salt. Then we combined the wet ingredients: eggs, sugar, vanilla, and milk.

Then we mixed them together. I took a shot of the batter so you could maybe see its consistency. It’s pretty thick.20130710-153758.jpg

I put the batter in a sandwich bag and cut off the tip of one of the corners. Just don’t let the bag touch the donut maker, because it will melt the bag! I tried sprinkles in this batch, they just all sort of blended in. Skip it.20130710-153937.jpg

When you fill up the holes in a mini donut maker, you have to fill them up really full. You want the batter to rise enough to touch the top of the mold so it cooks from both directions. Those aren’t child hands in the picture, they are mine. They’re about the same size.20130710-153811.jpg

When the donuts are done cooking, I just throw them into powdered sugar. At least for the party I did. They are delicious totally plain. 20130710-154154.jpg

Gluten-Free Coconut Flour Mini-Donut Birthday Tower

Try these sweet little coconut donuts for your next party or just because. Made with coconut flour, they are lower carb, and can be made paleo, too!

Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup coconut oil, melted/liquid (or butter or other oil)
  • 1/3 cup milk (any kind: cow, coconut, almond, etc)
  • 5 eggs
  • 1/4 cup sugar
  • 2 tsp vanilla
  • 1/8 teaspoon of sea salt
  • 1.5 teaspoons baking powder
  • powdered sugar for topping (if desired)

Instructions

  1. In a bowl place all dry ingredients into first bowl and whisk together.
  2. Next in a second bowl mix your sugar (or sweetener of choice – you can make it paleo by using honey or maple syrup), vanilla, coconut oil, and eggs. Whisk together in mixing bowl.
  3. Add your dry ingredients to your wet ingredients and mix all together.
  4. Place batter into a sandwich bag, seal, and snip off one corner.  Squeeze batter into donut maker. Bake as directed (you might need to flip your donuts if your donut maker is cranky).
  5. Cool on rack or coat with powdered sugar.
  6. Stack into a tower, place a birthday candle on, and enjoy!

    I love this recipe, I’m so glad you’re using the mini donut maker. I’ve heard some bad reviews, but that doesn’t mean it’s true. Now I have an excuse to get us one. I can’t wait to try this recipe. I hear coconut flour is so much better for us. So my family thanks you.

    Do you think these would turn out in my wilton mini donut pan in the oven?

      Yes totally. I don’t think they bake for any different length of time than regular mini donuts. You might want to hold back a little milk, bake a batch, see how they do, then bake it again. I can’t decide if I’d rather have a pan vs the maker. I still need to get my recipe smaller. I think 12 donuts is the right amount for a non special occasion recipe.
