Though it is a subscription, you can pause your deliveries when needed — whether you are out of town, have other dinner plans, or just aren’t in love with that week’s selections.  The standard subscription provides high-quality meats (free-range chicken, anti-biotic meats, etc.) to use in the recipes.  Though we do eat meat, we cook vegetarian three times a week.  Thankfully, Hello Fresh has a vegetarian subscription for both casual and dedicated vegetarians.  This review covers the vegetarian box, which featured a recipe by Jamie Oliver!

The boxes used by Hello Fresh keep all the ingredients for the recipes in order, and they stack nicely in the fridge.   Within each box, everything but the largest vegetables is separately packaged.  Condiments and canned goods are provided in high-end, commercial packaging.  Hello Fresh usually provides spices in their own, pre-measured branded packaging.

Hello Fresh has great instructions, and they are easy to follow even if you are an inexperienced cook.  Each recipe includes several pictures so you maintain a sense of how the dish should look as you go along.

Heirloom Tomato Flatbread with Fresh Mozzarella, Pesto, and Arugula. 30 mins, level 2, 753 cal.

I’ve got 2 fussy eater grandchildren staying with me and I knew they’d never even try this flatbread. So while I’m making the flatbread I’m also getting them fries, chicken patties, pancakes, BBQ pork, ham and strawberries for their dinner.  I try to give them things they like plus new items that maybe they’d try.  They were happy with their smorgasbord and we, hubby and I, had a fabulous new flatbread.  

My point…this was so simple to make that I was able to multitask.

A few notes:  I used a round stone and it turned out fabulous.   Just putting the flatbread back in the oven at 400 degrees didn’t get the cheese browned, it did melt.  So after it melted I turned my oven to broil and talk about turning a gorgeous brown, this did the trick.  I put this dinner, while it was still in the box, in my outside beer frig and for some odd reason the basil froze, I used it anyway.  So when you look at the pictures you’ll see some dark spots, that’s the basil. It still tasted very good.

Now I hate to admit this but my clothes are fitting tight lately, so I’m cutting back on portion size.  I only ate 1/4 of the flatbread with a little of the arugula that I didn’t put on the top of the bread on the side.  I thought I’d still be hungry not getting my full half of the flatbread.  Nope, I was wrong, it’s actually quite filling.  So happy me, I got to cut the calorie count in half and get another 1/4 slice tomorrow for lunch.

Before I rate this delectable dish, let me say how much we enjoyed it.  Frankly, you just can’t go wrong with pesto but add it to these ingredients and you get fabulous tastes.

Southwestern Stuffed Zucchini with Sweet Corn, Monterey Jack Cheese, and Cilantro. 35 mins, level 1, 708 cal.

I have a cookbook that is all about recipes for vegetables in A-Z order.  And of course, there’s a lot of stuffed bell pepper recipes which we like.  We find it’s a great way to clean out the vegetable bin. Chop a little of this and some of that and throw in any leftover pasta, top with cheese, bake and easy peasy you’ve got a great dinner.  Be sure to par boil the pepper first.

Anyway, this recipe reminded me of those wonderful dinners I’d make.  It didn’t take a lot of anything to put this together.  I did like the way the zucchini was roasted first, it was so tender we ate the skin and all. There was so much filling that I filled the four zucchini “boats” and then filled a casserole dish, sprinkled it with cilantro and cheese then popped it in the oven to melt the cheese.

We ate all 4 zucchini “boats” and about 1/2 of the left over filling.  Good thing I enjoy leftovers because I’ll be eating the filling for lunch tomorrow.

We are now big fans of the Basmati Rice, it has such a good flavor.  To tell you the truth we found all the ingredients to be quiet enjoyable to the palate.  We rated this a 9.5.

Crispy Falafel Salad with Pickled Red Onion, Cucumber, and Greek Yogurt Dressing. 40 mins, level 2, 736 cal.

Although I’ve lived most of my life in northwest Florida I’m not a GRITS, Girl Raised in the South.

So I wasn’t raised on deep fried chicken, collards and other various southern delicacies.  I can’t tell you the last time I deep fried anything.  AND since I’m on a perpetual diet I don’t eat much fried food anyway.

So this was a real treat, frying falafel fritters and man oh man were they delicious.  This is going to ruin my calories for the day!!!!  I did go on a walk with my husband to help counter balance those yummy calories.

From the salad made with bib lettuce, pickled red onion, cucumbers and parsley to the falafel fritters and topped with Greek yogurt dressing we enjoyed eating our way through this meal.  I’d probably make this recipe again but I’m not sure about getting the ras el hanout spice mix which refers to the best spices at the market each day.  I might just have to look for that at the grocery store.  The only step I’d do differently is I’d try baking the falafel fritters, then I’d have to rename the recipe because a fritter by definition is batter that is fried.  Falafel puffs?  Falafel bites?  Oh well.
