Hello Fresh launched a new Guest Chef Series this week!  Chef Nir Mesika of Timma Restaurant in New York brings his expertise, honed in Israel and Milan, to this week’s menu.  Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week.  Hello Fresh is a subscription, but you can pause your deliveries and choose alternate meals (at least for the Classic box). Hello Fresh‘s menu cards have detailed instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  I like the boldface on specific ingredients — it makes it easier to grab everything you need at each step.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated.

Since I run our homes recycling operation, I love the new packaging — puffy insulation and other complicated items have been replaced with simple corrugated and butcher paper.  Completely recyclable, and more than enough insulation for November in a North American temperate zone.  A while back, they switched from bagging the individual recipes to providing a small box for each recipe, each being nestled atop ice packs within the outer shipping box.  This has been an excellent way to go, and they seem to be sticking with it.

This dish made a fine dinner, but it didn’t wow us. The lean and high quality beef used by Hello Fresh actually makes it more difficult to produce a tender meatball. I had trouble thickening the sauce and had to add additional cornstarch, and the carrot-heavy slaw was good, but seemed like merely an accompaniment, and not a true companion.

We absolutely loved this dish, and it was the star of the show. The pic shows it plated family-style, so the platter has both servings on it. We received three thighs, and the recipe made lots of freekeh — we could have easily fed a guest, as well. I cooked the chicken a few minutes longer, since dark meat suits us better more well done. The Freekeh salad was superb and full of complementary flavors: sweet and rich squash, savory grains, creamy and slightly bitter fava beans, and bright lemon, onion, cumin and oregano.

Hello Fresh is always a lot of fun.  The recipes are accessible and accomplishable for novices, and the ingredients and palate are top notch.  I’m really excited about the Guest Chef Series, particularly since the inaugural dish was such a smash.

Here are the selections for next week! Meal choices end Wednesdays at midnight. We swapped out the salmon for the dumplings.

You can click on each dish and get the recipe information, including calories, ingredients, and difficulty levels.  We like having this info available beforehand, as it allows us to avoid meals that we think are too involved or require to much time for our schedule that week.  Although the names of the dishes are fairly lengthy and descriptive, it is also nice to have the ingredient list to get a fuller picture of the dish.
