Yet another amazing week of vegetarian meals!  Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries whenever you’d like. They offer both vegetarian and regular (omnivore) boxes – this is the vegetarian box!

Hello Fresh instructions have very nice illustrations, are clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first. Even a novice cook can follow them.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated. I like that the outer packaging of the box is recyclable.

Pad See Ew with Chinese Broccoli, Portobello Mushroom, and Peanuts. Level 1, 624 cal. The name of this dish was a little off putting but it was great!  I have to admit I’m a slow cooker and so far it’s taken me longer than the time listed on the recipe card.  But since I’m retired, I’m ok with that.  If I were still working I know I could kick up my pace and make the time.

The recipe called for using a large pan and I decided to use my electric wok.  That worked perfectly and when the recipe called  to set aside items I hooked on the wire rack.  Items set aside on the rack were near the heat so they didn’t cool completely.

I’m absolutely loving the directions telling me how long to cook certain vegetables as I have a bad habit of putting all chopped vegetables in the pan at the same time and sauteing until they become mush.  The vegetables in this recipe as well as the others have held up their shape, color and wonderful textures.  I’m definitely on my way to getting my chef’s degree! The rice noodles were a new food as well as the Chinese broccoli for my husband and I.  The noodles were easy to cook and we liked the texture.  

We rated this a 9.5.  My husband’s words, “this is a keeper,” says it all.

Charred Kale and Plum Salad with Wild Rice, Ricotta, and Honeyed Walnuts. 45 minutes, level 2, 735 cal. First thing I noticed right off the bat is that there was a generous amount of kale.  I’ve only cooked with kale 2 ways, baked chips and in soup and I love the chips so I knew this would be good.  When making this dish I would suggest that you cut the kale into bite sized pieces.  Definitely serve the kale straight from the oven, nice and crisp.   My husband’s response to learning that there were plums in the dish, “why that’s just plum crazy!” That’s my man!

We did think the shallot was strong in the dressing.  Perhaps making the dressing an hour before so it has a chance to blend more?

Besides learning to broil kale, I also learned how to candy the nuts.  And speaking of learning, may I give a little free advise from a retired teacher?  Use recipes to teach children about everything. What do recipes teach:  reading, reading comprehension, everyday math skills, throw in science for those times you make a mistake and the science of how the plants grew or where did the cheese come from?  There’s also the health factor, is the food good for us?  Don’t forget to use the nutritional guide. And geography, where does the plants grow?  Is this a foreign dish and if so where?  Find the place on a map.  And finally, language arts, what’s the main idea?  I could go on but I’ll stop now, you get the idea. 

We liked this dish and rated it an 8.5 but the candied nuts and broiled kale those are 10’s!  I’ll be making those again.

I decided to use this box first because I’ve never worked with plantains before and didn’t know how well they keep.  When I first looked at the ingredients my first thoughts were, who in the heck would put a plantain and radishes together?  This is going to be bland with only cumin, honey, and salt & pepper as seasoning.  It couldn’t have been further from the truth.  This was a great dish, my husband was crazy about the radishes and I loved the sweetness of the plantain.  This was one scrumptious meal!  It rated a 10 on the Vicky & Dennis scale.  We ate the first ones that are layered just like the directions and their pictures show.  BUT the next one we decided it would be easier to just dump all the remaining ingredients (except cumin and honey) on our plate and use the tortilla just like chips.  You’re only supposed to use 1/2 of the beans, well in the dumping process we used all the beans.  It was sooooo good and we were sooooo stuffed.  This meal could have easily served more than the 2 of us.

Thanks to this recipe I learned how easy it is to prepare and cook plantains.  I thought this was going to be a bland weird dinner instead it was a meal we’ll definitely make again.

These recipe cards with their detailed instructions, pictures and such would be great to teach beginner cooks with.  I have just been having a fantastic time cooking these meals (and eating them!).
