Hearty, fresh, and comforting, this week’s Hello Fresh had some amped-up versions of some of my favorite dishes.  Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Take $40 off your first box with coupon code 7UT7K8. Hello Fresh is a subscription, but you can pause your deliveries and choose alternate meals (at least for the Classic box). There’s also a vegetarian box available. This is a solid meal subscription box with easy and accessible recipes.

Hello Fresh recently redesigned their menu cards, and the instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated and others (and you can see that you are not getting food service condiments from a number 10 can).

Smoky Chicken Fajitas with Blistered Corn Salsa & Fresh Guacamole:  This dish was fresh and mild, and the veggies that came in the box made enough of the corn salsa to smother the tacos and then some.  I thought this was kind of a “fish taco” approach to a chicken fajita, as it had ultra fresh toppings with great texture rather than relying on cheese and sour cream for interest.

Swedish Meatballs over Egg Noodles & Baby Portobellos:  To make this dish more universally palatable for my family, I omitted the mushrooms from the dish (and saved them to make a couple giant portabella burgers).  The dish was still tasty without the mushrooms, and the meatballs and oniony gravy lent plenty of rich goodness to the tender noodles.

Sage-Butter Roasted Pork with Roasted Butternut Squash & Charred Broccolini:  This dish is simple but delightful.  The great quality pork cooked tender, and the roasting really develops some nice flavors in the squash and broccoli (our box came with broccoli rather than broccolini, but it fit right in with the dish and was fine).  The garlic butter took the pork to a whole other level.
